I decided a while ago that it was easier for me to pick what I want to cook/bake if i have a picture to go along with it, so i started compiling the recipes that "work" for DUN and me!

Chicken Chow Mein
¼ C. Onion (chopped)
1can (4oz.) Mushrooms, drained (reserve juice)
2 Tbs. Butter
2 C. Celery (diagonally sliced)
1can (1lb.) Bean Sprouts, drained
3 Tbs. Sugar
½ tsp. Salt
2 Tbs. Corn Starch
3 Tbs. Water
1 ½C. Cooked Chicken or Turkey, shredded or diced
Chow Mien Noodles
Rice
Cook onion & mushrooms in butter until tender
Add water to reserved mushroom juice to measure 1 ½ cups of liquid
Add Celery, Bean Sprouts, Soy Sauce, Sugar, and Salt.
Heat to Boiling
Reduce heat and simmer 15 min.
Blend Cornstarch and Water
Stir into Vegetable Mixture.
Stir constantly, until mixture thickens and boils.
Boil and stir 1 minute
Stir in Chicken/Turkey
Heat through
Serve over Chow Mien Noodles and Rice

Cilantro & Lime Rice

Cilantro & Lime Rice:
1c rice
2c water
3 chicken bouillon cubes
½ tsp. dried onion
¼ bunch of cilantro(chopped)
1TBS oil
Bring water to boil, add rest of ingredients and cook rice. Add juice from lime. Mix well and serve.
Instant Cilantro & Lime Rice:
1c instant rice
1c water
1 chicken bouillon cube
½ fresh onion, chopped
½ bunch fresh cilantro (chopped)
1TBS butter (optional)
Sautee onion and butter. Add water and bouillon cube, bring to boil. Add rice and cover 5 minutes on no heat. Stir in cilantro and juice from lime.

Yummy Rice
1c. Instant Rice1 cube Butter (½ cup)
1 Onion (chopped)
½c. Celery
1 can Chicken Noodle Soup (10.5 oz.)
Water
Melt Butter in sauce pan.
Add Onion and Celery.
Sautee until celery is bright green.
Drain liquid from soup into measuring cup.
Add water to soup liquid until it equals 1c.
Add liquid and noodles to veggies.
Bring to Boil.
Add Rice.
Cover and remove from heat.
Let sit for 5 min.
Serve with Sweet and Sour Meat Balls/Chicken

Simple Curry and Rice

1 Yellow Onion (diced)
Ground Hamburger (about 1lb.)
2(10.5 oz)cans Cream of Mushroom Soup
Med-sized container Sour Cream
Curry Powder (about 1Tbs- until color is right)
Instant Rice (prepare according to pkg. directions)
Brown Onion and Hamburger in skillet.
Salt and Pepper to taste
Add Cream of Mushroom Soup (undiluted)
When warm through add Sour Cream
Add Curry powder until desired taste/color
Serve as sauce over Instant rice.
We also really like this with canned mushrooms/drained. Add these when you do the onion so they will also be browned.

Stir Fry

Boneless Skinless Chicken Breasts
Onion
Water Chestnuts
Instant Rice
Soy Sauce
Frozen Stir Fry Vegetables
Mushrooms
Chow Mein Noodles
Cook Rice to package directions, while rice cooks:
Cut up all vegetables.
Place Chicken, Onion, Mushrooms, and Water Chestnuts in hot frying pan,
Cook until chicken is no longer pink in center.
Add Frozen Veggies and continue cooking until hot through.
Serve with Soy Sauce over Rice.
