Chimichaladas

1 pkg. Frozen Chimichangas (beef and bean)
1 can Enchilada Sauce
Cheese
Sour Cream

Put Chimichangas in a 9x13 pan
Pour Enchilada Sauce over Chimichangas
Bake according to pkg. instructions
Shred cheese over top and allow to melt
Serve with Sour Cream

For a quicker cook time, use a glass 9x13 and thaw the Enchiladas in the microwave- THEN bake them the rest of the way in the oven for a better flavor and texture.

We use El Monterey brand Chimichangas

I used Green Enchilada Sauce here

Our favorite side for this is mexi-corn. One can of corn (drained) with a can of diced tomatoes (spicy).

We also like rice or tater tots (mexi-fries).

obviously the mexi-corn is best heated on the stove.
