I decided a while ago that it was easier for me to pick what I want to cook/bake if i have a picture to go along with it, so i started compiling the recipes that "work" for DUN and me!

Swiss Oatmeal
Raw Old Fashioned Oats
Yogurt (Greek or flavored)
Set out ingredients buffet style.
Put Oats in a Bowl and top with preferred yogurt and toppings
Suggested toppings- Chopped Walnuts, Sliced Almonds, Bananas, Berries, Peaches
Egg in the Hole in the Bread
Bread, sliced
Butter
Egg
Salt and Pepper to taste
Toast Bread
Butter both sides
Cut hole in Bread using top of small glass*
Remove hole
Place hole and crust in skillet
Bring skillet to high heat
Crack egg in the hole in the Bread
Salt and Pepper to taste
Once Egg has set up on bottom, flip
Continue to cook on other side until Egg is done
*small cookie cutter can also be used
Quiche
¼ lb Bacon or Sausage, cooked
4 oz Shredded Cheese
2 TBS Butter
4-6 Eggs, beaten
¼ cup finely chopped onion*
1 tsp Salt
½ cup Flour
1 ½ cups Milk
Lightly grease 9” pie pan
Line bottom of pie pan with cheese and crumbled meat
Combine remaining ingredients in bowl
Wisk together until smooth.
Pour over cheese and meat in pie pan
Bake at 350* for 45 minutes
Serve hot or cold
*Also good with Green Onion, Spinach, Red Pepper, Green Pepper, Cilantro, Mushrooms.
-Add a bit less liquid or increase cooking time when adding vegetables.
-To save time in the morning, make the night before and refrigerate overnight.

Sausage Gravy
Ground Sausage
2 Tbs. Butter
Flour
Milk
Brown Sausage in skillet until no longer pink.
Add Butter and allow to melt.
Add Flour by Tbs. and stir.
Continue adding flour until fat is all absorbed.
Allow to cook until flour has become very light brown.
Add milk a couple cups at a time and bring to simmer.
Continue adding milk until desired thickness is achieved.
Salt and Pepper to taste.
Serve over Biscuits.
